The land where they grow their grapes are rich in volcanic residue. The vineyards alternate with olive groves and fields forming a good model of biodiversity.

Malvasia di Candia, Trebbiano, Cesanese, Merlot, and Bombino are grown in the vineyards of Casale Mattia. Casale Mattia is also famous for Frascati wine production. Frascati wine is a typical wine of the region made at Casale Mattia using Malvasia as well as other grape varieties. Casale Mattia winery also produces other whites and reds using traditional winemaking methods. Their line also consists of white and rose sparkling wines made using charmat method.
